Why the base metal decides everything
Every claim in this category reduces to one question: what is underneath the gold? Plating is measured in microns and wears at contact points no matter who made it. Over surgical stainless steel, wear exposes more non-reactive metal and nothing happens. Over brass, it exposes copper, which tarnishes and can mark skin. Over sterling silver, which is what gold vermeil is built on, it exposes a metal that tarnishes on its own.

Coatings and adhesives
Some fashion jewelry uses lacquer or protective top coats that repeated solvent contact can cloud. Stones set with glue rather than prongs can loosen, because some adhesives soften with alcohol. A metal setting with prongs or a bezel is unaffected.
The rash under the ring
The most common sanitizer problem is not damage to jewelry at all. Gel pooling under a ring band keeps alcohol, fragrance, and thickeners against the skin, and combined with frequent washing it causes irritant contact dermatitis: a red, itchy, sometimes scaly patch matching the band. Before blaming the metal, try this for a week: let sanitizer evaporate completely before pushing a ring back into place, rinse and dry under the band after washing, and switch the ring to the other hand for a few days. If the rash clears, it was irritation, not allergy.

Choose stainless steel or solid gold for rings you wear through the day. Keep pearls and soft stones for times you are not sanitizing constantly. Once a week, wash rings in warm soapy water to remove built-up film, and dry them fully. That is all metal jewelry needs.
